"Mirabelle is a small yellow plum, used extensively in the Alsace region of France where I am from to make eau-de-vie. I grew up in the orchards, and distilling eau-de-vie in my family was always a big reunion. For me, the mirabelle is the most beautiful expression of my terroir."

About The Founder

Born and raised in Alsace, France, Hugo Togni began his career in the kitchens of Michelin-starred restaurants, where he trained as a cook and developed a deep respect for terroir and craftsmanship. His path led him beyond the kitchen and into the wider world of hospitality, where he discovered a passion for beverages and the cultural stories they carry.

In 2019, Hugo relocated to Canada, bringing with him a perspective shaped by precision, tradition, and innovation. In 2021, he co-founded Bar Pompette in Toronto, which he managed for four years. During this time, Bar Pompette quickly earned a reputation as one of the country's most acclaimed cocktail bars.

In 2025, Hugo launched Mirabelle, a hospitality studio dedicated to creating meaningful, well-crafted beverage and hospitality experiences rooted in intention, culture, and craftsmanship.

Mirabelle operates through two distinct but complementary branches, each rooted in the same philosophy of intention, craftsmanship, and connection to the people.

Mirabelle Hospitality

Mirabelle Hospitality focuses on consulting and development for hospitality operations. Our approach begins with understanding the client's identity and vision, then building programs that authentically reflect who they are and what they aspire to create.

Services include bar layout and ergonomics, menu and program design, staff training, and efficient systems. While more operational in scope, the ethos remains unchanged: thoughtful products, well-trained teams, and concepts built with care, clarity, and long-term vision.

Every project is shaped around the client's identity, needs, and ambitions, with an emphasis on sustainability, coherence, and human experience. This is consulting work rooted in finding and amplifying each client's unique voice.

Mirabelle — Drinks with Terroir

Born from a deep respect for terroir and the people behind it, Mirabelle - Drinks with Terroir is focused on drinks as cultural expressions. Through events, pop-ups, and collaborations, Hugo works directly with farmers, producers, artisans, and chefs to develop beverages that tell a story of place, season, and origin.

These are often non-alcoholic creations crafted for specific occasions—chef pairing dinners, private events, seasonal pop-ups—where Hugo personally serves and presents each drink in close dialogue with those who grow and make the ingredients. This branch represents his personal ethos and creative expression brought to life through beverages.

Bar Pompette (2021–2025)

As co-founder and General Manager, Hugo helped establish Bar Pompette as one of Canada's most acclaimed cocktail bars, bringing together his culinary background with a vision for beverage-focused hospitality.
